TEMPTING TREATS THE HEALTHY WAY WITH REAL FOODS

If you’re stuck for things to do with the kids this Summer break, this would make a great activity to share with them. These Raw Vegan Goji Berry Chocolates are made with raw cacao paste (also known as cacao liquor or cacao mass). Cacao Paste is produced from the whole cacao bean, therefore it has both cacao fats (cacao butter) (cid:68)(cid:81)(cid:71)(cid:3)(cid:86)(cid:82)(cid:79)(cid:76)(cid:71)(cid:86)(cid:3)(cid:11)(cid:70)(cid:68)(cid:70)(cid:68)(cid:82)(cid:3)(cid:83)(cid:82)(cid:90)(cid:71)(cid:72)(cid:85)(cid:12)(cid:17)(cid:3)(cid:58)(cid:72)(cid:3)(cid:192)(cid:81)(cid:71)(cid:3)(cid:87)(cid:75)(cid:68)(cid:87)(cid:3) using Cacao paste makes a smoother, silkier, not-so-bitter chocolate, as there are less cacao solids. In this recipe, we take the deliciousness to the next level by adding goji berry powder, lucuma and mesquite, which help create a fudge-like texture. Use currants, and coconut nectar or maple syrup to sweeten the chocolates, giving them a really pleasant fruitiness. Think of these as fruity chocolates for people who don’t like their chocolate bitter.

nectar OR 1 Tbsp or about 20g agave nectar OR 1 Tbsp or about 20g maple syrup (cid:135)(cid:3)(cid:3)1 tsp vanilla paste or vanilla extract (cid:135)(cid:3)(cid:3)a handful of goji berries

cacao butter and coconut oil together, making sure not to heat above 40C to keep the butters raw.

2 While the butters melt, weigh out the lucuma, carob, goji berry powder, maca and salt into a bowl.

3 Put the melted butters and the powders

into your blender, add the currants or raisins, the sweetener and the vanilla and blend on high until all is perfectly combined.

4 Drop a few goji berries into the chocolate moulds of your choice and pour the chocolate into the moulds.

5 Allow the chocolates to set in the fridge (or in the freezer if you are in a hurry).

6 The chocolates will keep for well over a month if kept in an airtight container in the fridge.
