In keeping with the holistic philosophy that underpins the Garvald initiative. best quality organic ingredients are used wherever possible in each of the food processing workshops. and no corners are cut in production. With regard to the trainees. the idea is that selfesteem comes from a job well done and making a valuable contribution to one‘s community. As a result. the products are excellent. and in great demand. In fact. the sesame seed and the whole wheat and rye loaves which the Engine Shed sells to many Edinburgh wholefood stores and delicatessens are, in my opinion. the best brown bread available in the city. and the

Glasgow's Tron Theatre is in the lucky position of having a cafe-bar that is as
popular as the on-stage entertainment.
Here chef Yan Leenhouts shares a favourite fish dish.
DUTCH PRAWN RAGOUT GRATINEE
Serves four: Zozbuﬂer
1 pint milk
4 fl 02 fish stock 2 oz flour
1 clove garlic
1/2 green pepper 1/4 Spanish onion 402 prawns Gruyere cheese—grated breadcrumbs thyme
Melt the butter, mix in the flourthen gradually blend in the milk and fish stock over a gentle heat to make a roux. Saute the garlic, carrot, green pepper and onion lightly in a little oil and then add to the roux. Add a pinch of fresh thyme, fresh black pepper and salt. Add the prawns. Put the mixture in a heat-proof dish, cover with grated gruyere cheese and breadcrumbs and place under the grill until the top is golden-brown. Serve with a wedge of lemon and toasted rye bread.
