Shimla Pinks, the Indian restaurant chain that traded flock wallpaper for minimalist style with spectacular results, has opened a new branch at Glasgow's Hilton Hotel. The restaurants are named after the Indian equivalent of a Sloane Ranger and, since the first Shimla Pinks opened in Johnstone a decade ago, the brand has found a niche in the market. Billy Massih, the manager from Glasgow Shawlands, has been with the company since its inception. The menu will combine old standards with some new dishes, specially developed for the Hilton.

Peter Banks, who has a pedigree that includes a stint at Champanys and Martins, has just opened a top notch operation, the eponymous Banks Restaurant in a Georgian townhouse on Edinburgh’s Newington Road. We're talking seriously sophisticated, with an interior by Bill Potter from lnHouse and Philippe Starck furniture. Est Est Est, the sleek modern Italian, has opened a Glasgow branch in the heart of the business district in Bothwell Street, under manager Stephen Walsh. Think wood-burning stove; think huge glass windows; think about booking a table. The Edinburgh establishment is regularly packed, so it would probably pay to phone ahead. This bar has become a sweet k: ' ' success since its opening ,

last year and quickly won a : nomination as one of the top five bars in Glasgow. As v I walked through the door I

had a wave of déja vu and a sense that I’d seen this place

before. Perhaps on a recent ad? Scott and Duncan showed me the way as we served J&B and cola, long over ice

to the super cool clientele. I took a break to browse the 2000 strong CD collection and select some hip hop beats.

I had my eye on the embedded TV's and thought what a great place it would be to watch the match on Sunday: although with Geoff Montford at the decks, maybe footie's not such a good call.
