My team and | sample coffees from all over the world and select the ones that frolic in our nostrils and tickle our tastebuds. l roast the coffee old-style by smell. There's a lot of great coffee talk in the shop with customers and between staff.

We've formed many brilliant ideas over our house blend espresso and several romances have started in our shop. Worst: Mass consumer apathy to bad coffee -- people need to demand great coffee, not to mention the tyranny of unethical Italian-style coffee masquerading as good coffee and people who passively use ‘fairtrade’ to sell coffee without understanding that speciality coffee is fairer and better in the longer term.

and still am setting up the Catalyst Entrepreneurial Charity to help young Scots to take advantage of the great country they live in. I am also helping business student Fikirte Hailemelekot to set up a project aimed at stimulating local enterprise in her homeland of Ethiopia. Artisan Roast is also looking to work with Streetwise, the Edinburgh homeless charity.

1.2%.,- :_'-,.. -. i r x Have passion. I was lucky as my extended family roast speciality coffee in New Zealand. If you want to learn to roast speciality coffee the best way is as an apprentice. Matt's already got the job here at Artisan Roast so you'll have to try elsewhere. You have to get passionately involved in the whole process: from production to roasting to preparation.

- :5; j . is ; '. ., g The coffee revolution is about to hit Britain. Our mission is to bring great coffee to Edinburgh. For my business partner. Gustavo Pardo. and me this involves working with the growers and the cafes. restaurants and hotels we supply to provide the highest quality coffee to the consumer. I expect to be growing coffee and I want some of the current growers serving the coffee here.

The successful candidate will have a key role in the organisation as a member of the senior management team. They will have specific management responsibility for workshop programmes in West Lothian. East Renfrewshire and Angus. and for drama workshop leaders in these areas. They will also be expected to play a significant role in developing work in formal education.
