So what does your new role actually involve? Being head chef involves a fair bit of multi-tasking. As well as running kitchen operations in four areas of the department store, The Place to Eat, The Coffee Shop, Partners’ Dining Room and the catering facilities for the service building warehouse, I’m also responsible for creating and developing menus and managing suppliers and budgets. Progressing the skills of my team of chefs is also a really important element of my job.

Best / Worst Aspects? Having worked in the restaurant industry since leaving college, being off every night is absolutely unheard of so in that respect this job is ideal. It enables me to spend much more time with my family, which is really important to me as I have ve young children. If there is a worst aspect, I haven’t found it yet. I really enjoy what I do and we have a great team here. What did you do before you started this job? I worked in chef recruitment, ran my own business and also spent the last ten years working in Michelin starred establishments with chefs like Andrew Fairlie in Scotland, Michel Roux in London and Michel Guerard in the south of France. It was fantastic working with such experienced and world-renowned chefs and really made me strive to improve my own skills, both in the food side and in team management.

What’s the best way to get a job like yours? Get the necessary qualifi cations and experience with good head chefs learning from the best is truly invaluable. Remember to keep a look out and apply for the job! No one is going to come and nd you!

Looking back, what advice would you give to a young Brian at the start of his career? Listen to my parents and don’t do it! No, in all honesty, put your head down, learn and progress with direction from some really great teachers, mentors and inspirational chefs, which is just what has helped me get where I am today.

Technical Supervisor salary circa £16,500 We require an experienced technical supervisor to assist our Entertainments Manager with the set up and operation of gigs and clubs nights in two rooms. Sound and light experience is essential as is the ability to work closely with touring staff, crew and volunteers.

Applicants must be technically qualified and demonstrate the ability to set up both PA and lighting systems. Supervisory experience would be beneficial while a clear understanding of health and safety issues is essential. Hours based on a 35hr week but will be flexible based on demand. The position is offered initially on a fixed term to 31st May 2010.
