Stuffed Portobello mushroom

Serves 4

225g vegetarian haggis 4 large flat mushrooms

50g pine nuts

100g cheddar cheese, grated Preheat the grill to a medium/high heat.

Place the mushrooms gill side down on a baking tray and grill for 2 minutes. Once cooked, remove the mushrooms from the grill and turn so the gills are facing up. Mix the vegetarian haggis and the pine nuts together and equally distribute over the mushrooms. Sprinkle on an equal amount of the cheese onto each mushroom and place under the grill for a further 2 minutes or until hot and bubbling. Serve immediately.
