WHAT’S YOUR FAVOURITE CHRISTMAS FOOD? What’s your top tip about ensuring that it’s as good as it can be? g

PAUL MCKENNA & IVAN STEIN P Brussels sprouts. The trick is simple, don’t overcook them! They should be crunchy.

PAUL WEDGWOOD Always the rib of beef on Boxing Day with friends and family, a tradition e which keeps attracting more and more people meaning the rib gets bigger every year too!!

R ROISIN & MATTHIAS LLORENTE P Potato croquettes (I’m Irish!). T The i ve p’s: prior, preparation, prevents, poor performance. Basically, have as much done in the days running up to Christmas Day.

GUY COWAN I love traditional pork, sage and onion stufi ng and bread sauce. To ensure that it’s as good as it can be: lots of sage and onions and made slightly in advance. Bread sauce made when needed with plenty of double cream, butter and mace. I’m also very partial to foie gras en croute with trufl e, if anyone’s wondering what to buy me.

KENNY WHITTAL Roast chestnuts. Roast them slowly so they’re lovely and juicy on the inside; about 150 degrees for 30 minutes. AISLA STANIFORTH Favourite Christmas food has to be goose. Harder to do in a restaurant but for at home it’s fabulous.
