IT’S ALL ABOUT ‘SEASONAL GREETINGS’ AT THIS TIME OF YEAR. Which seasonal food do you enthusiastically greet in winter?

ANNA CHRISTOPHERSON A W Warming stews and home baked saffron buns. PAUL MCKENNA & IVAN STEIN Game season. Even though it starts in August with the grouse,

for us it comes into its own in the colder months, where richer dishes are welcomed more. Think pheasant, woodcock and wild Scottish venison.

RICHARD HELLER Dei nitely wild mushrooms, just brilliant in Scotland. PAUL WEDGWOOD Sea buckthorn is one of my most favourite ingredients which makes an amazing sea buckthorn tart with chocolate pastry. Or Jerusalem artichokes which I tend to pair with coni t duck: delicious!!

KENNY WITTAL I love Brussels sprouts and use them for everything including soup. I love them roasted in oil with chestnuts: just roast the raw chestnuts and sprouts in the oven in a bit of oil; then sweat off some onion and herbs in a pan and add them in with some good veg stock. Blend everything together and garnish with chopped chestnuts and herbs.

GUY COWAN Foie gras en croute. ROISIN & MATTHIAS LLORENTE Brussels sprouts, bacon and butter! Love it.
